This is an introductory course on the fundamentals of Ayurvedic Nutrition. We will explore the history and basic philosophy of Ayurveda, Ayurvedic anatomy, individual constitutions, eating according to your body type, and the importance of eating with the cycles of nature, along with traditional food rituals. Extensive menu preparations and traditional Ayurvedic recipes will also be included.

AN 106 Intro to Herbs for the Holistic Nutritionist – 30 hours
February 29, March 5, 7, 9, 12, 14, 16, 19, 23, 30 6:30pm – 9:30pm
This course is designed to (1) introduce the therapeutic use of plant medicine; (2) explore the fundamental principles and philosophies comprising the basis for herbal medicine and discuss the forms and techniques used to treat common ailments with herbal medicine; (3) provide an extensive materia medica of local medicinal plants, as well as kitchen and culinary herbs from around the world; (4) introduce local, North American and European grown plants, including their history, description, therapeutic use, contra-indications (for general use) and support reading for their additional health benefits; (5) review the application of herbal medicine and the use of single herbs for the digestive, skin, nervous, lymphatic and circulatory systems; (6) discuss common local medicinal and kitchen, culinary herbs for common health issues; and (7) explain how to prepare teas and some topical applications for common use.
